Fresh Summer Recipes

Below are recipes featured on Sunday 6/6 at the Kensington Farmers Market.

Join us next Sunday for more cooking demonstrations on quick and easy summer appetizers.

Honey Vinegarette

½ C olive oil

2 Tb. balsamic or other vinegar

1 tsp. high quality mustard

1 clove garlic

1 tsp. honey

Salt and pepper

Directions:

*Mince garlic into a pulp with a mortar and pestle

*Place all ingredients in a jar and shake!

*Optional:  add minced herbs.  Experiment!


Quinoa Tabouli

serves 3-4 as a main, 4-8 as a side

3 Cups Quinoa

1 fennel bulb diced

1/2 kohlrabi diced

1 cucumber dicedkohlrabi_1

Fennel tops

1/2 bunch Parsley

1/2 bunch Mint

juice of 3 lemons

1/4 C high quality olive oil

salt and pepper to taste

Directions:

*Cook quinoa in 4 1/2 Cups water– bring to a boil, then simmer until all liquid is dissolved.  Let quinoa chill in fridge for at least 1 hour.

*Dice vegetables small– about 1/4 inch cubes or slice thin.

*Chop herbs finely.

*Place lemon juice and olive oil in a jar and shake.

*Mix all ingredients in a medium sized bowl and stir.

*Let sit for at least 1 hour for maximized flavor.

*Optional: add diced tomatoes, purple onion, or chopped garlic for added kick!

*Chop herbs


Apricot and Cherry Chutney

Serves 8 as a condiment

5 apricots diced fine

1 cup fresh pitted cherries diced fine

1 bunch spring green onions chopped fineapricots

1/2 inch fresh ginger- peeled

1-2 Tb. local honey

1 Tb. sesame oil

1/2 t. cinnamon

1/4 t. cardamom or garam marsala

1/4 t. curry powder

salt and pepper to taste

Directions:

*Dice apricots and cherries small to about 1/4 inch.

*Chop the ends of the green onion fine.

*Place all ingredients in a bowl and mix.

*Let stand for at least 1 hour to maximize flavor.

*Serve as a condiment or on toast.

Strawberry Salsa

Serves 6-8 as a dip or condiment

1 quart fresh strawberries

1 bunch spring green onions

1/2 thai chili pepper or 1 jalapeno

1 bunch cilantrostraw

1 1/2 Tb. cider vinegar

Salt and pepper to taste.

*Slice strawberries fine, then coarsely chop.

*Chop spring green onions and cilantro fine.

*Mince chili pepper (being very careful to wash hands and knife afterwards)

*Add all other ingredients

*Let stand for at least 1 hour.

*Serve with chips or as a condiment with eggs or fish.
